We source organic dessert apples from a local orchard certified by the Soil Association and sharing our environmental principles. In the winery we treat this fruit with all the respect it deserves to make the base cider. We then add further yeast and immediately bottle the cider, setting off a second fermentation which adds the fizz. The cider spends time on lees to mature and develop complexity.
Bright, elegant nose with aromas of hedgerow blossom, freshly picked apples and a hint of toast. The palate is crisp and precise with red apple skin flavours leading to warm honey on the finish.
